Roasted cauli, meatball and quinoa salad with tahini yoghurt dressing.
The perfect warm ‘salad’ for weight-loss.
I feel cheeky calling this a salad as it’s really a complete meal in itself, and I’ve made this look a ‘little’ pretty for the plate, but ‘in real life’ I actually recommend tossing the whole thing together as it’s slathered in a tahini yoghurt sauce that is DELISH!
Meals that support weight-loss?
High protein, high fibre, low carbohydrate.
When working with clients, I recommend increasing protein to equal the largest amount of energy source as it increases satiation, helps to build lean muscle mass which increases fat loss, while bulking out meals with high fibre vegetables for gut health and satiation and then adding smaller quantities of good quality fat and smart carbohydrates.
This is a roasted cauliflower, meatball and quinoa salad with tahini yoghurt dressing.
Serves 2-4 lunch or dinner
Ingredients:
1/2 head cauliflower
2 tsp ground cumin
2 tsp ground coriander
2 tsp garlic powder
Olive oil (drizzle)
Salt
250grams minced beef (half a pack)
Handful of green beans
2 tbs dried currants
2 tbs flaked almonds (dry roasted, simply brown off in a dry frypan over mow heat, watching until they turn colour)
1 cup quinoa, cooked to packet instructions.
Handful of fresh mint, de-stemmed.
Optional: I didn’t put this on the original, but this is delicious with fresh diced red onion or red pickled onion, OR pomegranate seeds. YUM!
Method:
Cut the Cauli info small florets, drizzle with olive oil and sprinkle with sea salt and then sprinkle 1 tsp each of cumin and coriander over it. Roast in a 180C oven, turning if required, until the edges are browned.
Mix the remaining cumin, coriander and garlic powder with the beef, roll into small balls (about 2tsp meat each) and fry until browned on each side.
In a large bowl, mix all ingredients together with the dressing and top with mint, currants and flaked roasted almonds.
Dressing
1/2 cup greek yoghurt
Juice of one lemon
1 garlic clove, minced
Salt
1tbs tahini
Method:
Mix together until combined. If it becomes really thick, add a little bit of filtered water at a time until it reaches the consistency you want.
