I drove down to warm cafe in our local village to grab oven roasted mushies' for lunch with the husby' (because we're both working from home today) and I have to be honest, I was left fearing for my life. The wind, blowing over 100kms an hour here in Melbourne today. The eucalyptus trees bending to the roof of my car. Oak trees, arms waving in the frigid air like they're trying to attract the attention of Mother Nature herself and say "Give us a rest". Branches and leaves, seed pods and bark are strewn across all of the roads.
There is a prevailing look of those walking down the footpath. Mouths set. Arms braced across their chests as they hold tight to any warmth trying to escape from their bodies and through their clenched coats.
Cold noses.
Winter has finally arrived in Victoria and it is bloody cold.
And then I thought of you, my cold little winter bunnies, how are you doing today in this weather? What could make it a warmer, cosier, sweeter evening for you tonight? Rhetoric aside, I have a recipe that is as good as a warm hug from your Nanna. I'm sharing the magic recipe for the Sticky Date Pudding from my very first recipe eCookbook 'Sweet', and it is an absolute winner. In all my years of cooking I can't remember another recipe that actually uses so much water in the cake, but after trying and testing tens of wheat, gluten and grain-free versions of sticky-date pudding this recipe was the obvious choice. Traditional Sticky Date Pudding is high in refined sugar and processed white flour. If you buy them from the supermarket they are virtually all artificial chemicals and preservatives. Sticky Date Pudding is one of the recipes I have been asked time and time again to ‘healthy up’.
While this recipe remains super sweet I am thrilled to be able to have created a Sticky Date Pudding with all-natural ingredients, a rustic earthy flavour and a luscious caramel sauce.
Serve with a dollop of coconut cream, fresh cream or ice-cream on top. Enjoy.
Ingredients
1 cup dates
1 1/4 cup boiling water
1 cup buckwheat flour
1/2 cup rice malt syrup
1 tsp bicarbonate of soda
1/2 tsp baking powder
2 eggs
60 grams coconut oil melted (1/4 cup)
1 tsp vanilla bean paste
Sauce
1/4 cup rice malt syrup
1/4 cup raw honey
1/2 tsp vanilla bean paste
1/3 cup coconut cream
Preheat oven to 180C
Soak dates in boiling water for 5 minutes and then place dates as well as water into a food processor along with the rice malt syrup, eggs, bicarbonate soda, baking powder and melted coconut oil. Process until the mix is smooth and combined.
Transfer to a bowl and add in your sifted buckwheat flour. Mix through until combined and pour into a greased loaf pan or 15 cm cake tin and bake until the pudding has risen and springs back when touched in the center. About 30 minutes.
Sauce
In a small saucepan combine all ingredients and simmer for 5-8 minutes until thickened. Lift serves out with a serving spoon and pour caramel sauce over your pudding serves.
Extra caramel will keep for up to 1 month in the freezer. I bet it won’t last anywhere remotely close to that time though, after you get a taste of it.
