Raw Rich Chocolate Cashew Slice
Straight up! This slice took me five minutes to make so don't sweat how hard it is... it isn't.Since taking hold of my new Vitamix a couple of weeks ago I've been chomping to make some new raw recipes. You see, I kind of 'raw-caked' myself out a while back when I was immersed in the making of 'Sweet - A collection of clean and classy sweet recipes for the health conscious cook'.I don't I could have eaten another raw cake for a year. But hey... I'm back and what did I miss?EVERYTHING.That taste, that smooth smooth texture. The flavour.Phwaor.
Raw Rich Chocolate Cashew Slice
Makes enough for six round circles (+ off cuts) or 12 bars.IngredientsBase
1 cup walnuts
1 cup shredded coconut
1 cup of dates (soak them in hot water for 5 minutes to soften them and drain)
1 pinch of salt
Method
Blitz all ingredients in your food processor until all combined. This took me about 4 pulses in the Vitamix.
Press and smooth into the bottom of a round cake tin lined with plastic-wrap and pop into the freezer while you make your chocolate topping
Chocolate Slice
1 cup raw cashews
2 tbs raw cacao powder
4 tbs coconut oil melted
2 tbs rice malt syrup
Pinch of salt
Method
Blitz the cashews in your food processor until it resembles a smooth powder (very fine)
Place into a small bowl, add remaining ingredients and stir to combine
Spoon chocolate mixture over the base, smooth with your fingers or the back of a spoon and place back into the fridge to set (about 1-2 hours)
Slice and enjoy. I know you'll LOVE it.
