Raw Peppermint Raweo's

 Image Prep Time: 20 minutesDescription: In ode to the latest edition to the British Royal Family, these bitingly fresh Raweo’s are sure to be the beginning of the end for you on your raw or ‘un-cooking’ addiction.  Like a cross between a Peppermint crisp chocolate bar and a mint slice biscuit (minus the guilt and refined sugar mood swings) these little Prince's will give you a lot to be grateful for.  May they reign over your friends and family and may you be followed by the paparazzi every time you make them! ImageMakes:  10 Raweo’sUtensils:I always use silicon (mini muffin for these) trays when making raw treats because they make it super easy for you to pop the treats out after blasting in the freezer.Ingredients: note; You may want to double the ingredients if you are sharing or have enough will power not to eat the entire lot in a single sitting.ImageChoc 'biscuit':

  • 1 cup almond meal
  • ¼ cup desiccated coconut
  • ¼ cup raw loving earth cacao powder
  • 1/3 cup loving earth coconut oil
  • 1 tsp organic peppermint extract
  • 2 tbls rice malt syrup

Method

  • Mix all ingredients together in the food processor.
  • Roll into small balls and press flat into the bottom of your mini muffin tray
  • Chill in the freezer for 5-10mins

Peppermint 'cream'Ingredients:

  • ½ cup desiccated coconut
  • ¼ cup coconut oil
  • 1 ½ tbls rice malt syrup
  • 1 tsp organic peppermint extract

  • Blend all ingredients together in the food processor
  • Place into  the fridge to chill until semi hard
  • Take out of fridge, as well as choc biscuit sides out of freezer.  Use a teaspoon to size small amounts of the hardened coconut peppermint filling.  Roll into small balls and press onto 1 choc side (keep it in the muffin tray).  Pop out another choc side and push onto the top of the filling.
  • Keep cold in the fridge or freezer
  • Crown yourself ‘un-cook’ extraordinaire!
