Cauliflower Pizza Base with Gourmet Tomatoes
It's no lie, I like to talk and because sometimes I'm lost for what to ask my husband (who I want to know like the inside of my own palm), I ask him what his favourite food is. I know the answer, I just forget for a bit.
It's pizza.
I'ma going to be honest with this one peeps, I do still like my buckwheat pizza base slightly better and husband agrees, but that doesn't change the fact I could still eat a cauliflower pizza base every day for the rest of my life and still not get sick of it. Mmmmm Pizza (makes sound like Homer Simpson while drooling down chest).
Please let me know how you go making this in the comments below as I would LOVE to hear your opinion. I put off making a pizza from cauliflower for over a year. I was all like, "Uhuh Sista....I'll never be makin' pizza outta cauliflower". And then this happened...
Cauliflower Pizza Base + Gourmet Tomato's
Ingredients
1 whole head of cauliflower, trimmed, chopped finely in the processor or grated if needed
1 egg, lightly whisked
50g (2/3 cup) finely grated cheese
80ml (1/3 cup) passata (tomato paste or sugo)
1 packet of gourmet tomatoes washed
sea-salt to sprinkle
fresh oregano or thyme sprigs
olives (optional)
Method
Process the cauliflower in a food processor until finely chopped. Place chopped cauliflower in a steamer with small holes and steam until tender. Drain through a fine sieve, pressing down well to remove excess liquid. Combine the cauliflower, egg and half the cheese in a bowl.
Preheat oven to 230°C/210°C fan forced. Line a 30cm-round pizza tray with baking paper. Press cauliflower mixture firmly into the tray. Bake for 20 minutes or until golden.
Spread passata over base and sprinkle with chopped tomatoes, oregano and remaining cheese. Bake for 10 mins or until the tomatoes have softened and the cheese is golden.
I drizzle my pizza in my home-made pesto. Delish.
