instant pickled onions

Did you know that if you heat up apple cider vinegar and a spoonful of sugar and pour it over sliced red onions the let them sit for an hour, you’ll have the most insanely delicious pickled onions to add flavour to virtually any savoury dish you serve?


INGREDIENTS:
Please note that basically any balance/weight/volume of this will work. One onion, 1000 onions. Some sweet, sone vinegar, and ‘Bob’s Ya Uncle’. Ya’ hear?

This recipe makes around 4 cups of onions (or enough for a week in our house basically 🤣)

  • 6 red onions sliced thinly. I do mine in the food processor but you can slice by hand if you want.

  • 1 tbs sugar (you can also use honey).

  • About 1.5 cups apple cider vinegar (you simply have to cover the onions).

TIPS:

  • You can use any vinegar you like for this recipe.

  • They’ll be ready to eat within an hour and you can store in the fridge for up to three months (but you’ll eat them a lot sooner).

  • Store in the fridge in the vinegar for up to three months.

  • You can re-use any remaining vinegar for the next batch.

  • You don’t have to ‘heat’ the vinegar up if you don’t want to. Particularly for ACV that may be fermented or still have the ‘Mother’ in it. The heating pickles them pretty quickly (instant), but you can allow them to sit in the fridge overnight with cool liquid and it will d the same thing.
